It’s difficult to cook when you’re living on your own sometimes but eating out is expensive and unhealthy. So here comes this series to share the recipes I make for myself after many trial and errors. First recipe of the Bowl for One series we’re going with an easy recipe~
It’s a quick and low calorie meal option during weight loss but still taste good and great for summer with this refreshing salad during the heat ☀️
Thai Style Beef Salad
Ingredients
- 40 g mixed leaf salad
- 80 g cherry tomatoes halved
- 1/2 cup cucumber chopped
- 1/4 red onion sliced
- 100 g scotch fillet
- chilli
- coriander
Sauce
- 1/2 tbsp fish sauce
- 1/2 tbsp soy sauce
- 1 tsp raw sugar replacement
- lime juice
Instructions
- Preheat a skillet over high heat.
- Cook steak for 2 minutes each side or to your liking.100 g scotch fillet
- Chop tomatoes and cucumber into bite sizes and cut red onion into slices.80 g cherry tomatoes, 1/2 cup cucumber, 1/4 red onion
- Assemble salad with the mixed leaf salad, tomato, cucumber and onion.40 g mixed leaf salad, 80 g cherry tomatoes, 1/2 cup cucumber
- Mix ingredients for sauce and add to salad.1/2 tbsp fish sauce, 1/2 tbsp soy sauce, 1 tsp raw sugar replacement, lime juice
- Add chilli and coriander to taste and enjoy!chilli, coriander
